To ensure the very best quality ice is produced, the machine uses the unique Hoshizaki closed cell system - ice is made using only fresh water every time. Hoshizaki recommends that the water-cooled condenser should be connected to a closed circuit recirculating type cooling system utilizing a tower, water chiller or similar.
